Sun Kim, head chef of Meta Restaurant in Singapore will be taking over Arts Café from 19-20 October at Raffles Jakarta. Chef Sun Kim has put together a special menu inspired  by Meta’s signature dishes.

During this special dining experience, Che Kim will present a range of Canapes, featuring a set of tasty light bites. Chef Kim will prepare dishes like Tapioca with seaweed and ikura, Mushroom Tart with parmesan cheese, and Amaebi tartare with uni on toast.

For dinner, seafood dishes will be served with wine. Indulge in dishes like Sashimi of kampachi with pomelo, shiso and gochujang will be paired with 2011 Trimbach Pinot Gris Reserve from Alsace, France. The sophistication of Scallop chawanmushi with clam cream, dill and osetra caviar will be alongside Bordeaux wine, 2014 Chateau Villa Bel Air blanc. 2015 Domaine Anne Gros La 50/50 Cotes du Brian balances Slow cooked octopus with homemade XO sauce and Jerusalem artichoke.

Meat Lovers will enjoy Grilled Quail with mushroom ragu and parsnip that will be paired with a Burgundy, 2012 Louis Jadot Beaune 1er Cru Les Theurons. There is also scrumptious 40 hours cooked beef short rib shitake mushroom puree, pickled shitake, buckwheat to be paired with 2007 Chateau Malmaison from Medoc.

The course will be finished with mouthwatering Mango salsa with passion fruits sorbet, coconut and mint, paired with German Nahe 2012 Diel Riesling Kabinett.

Widely acclaimed as Singapore’s top best restaurant, Meta offers cutting edge fine dining, an amalgamation of influences from the West and his home country Korea, layered with inspirations gleaned from his training under chef Tetsuya Wakuda at Tetsuya’s in Sydney.

Born in South Korea, Chef Sun Kim much learned culinary skill at Le Cordon Bleu Sydney, before finally landing a position at Tetsuya’s Restaurant under the legendary chef with Waku Ghin at Marina Bay Sands Singapore. In 2015, he established Meta, which located in Keong Saik Road Singapore.

His adventurous style of contemporary Asian food stands out by weaving Western cooking techniques with Asian elements. With finesse and great showmanship, Chef Sun Kim pushes the boundaries of flavour combinations by melding Eastern and Western flavours which resulted in Meta restaurant to receive a Michelin Star in 2017.

The exclusive six-course dinner set menu at Arts Café by Raffles starts from IDR 799,000++ per person or IDR 1,488,000++ per person with wine.
