Edward Reza Firmansyah, the winner of Starbucks Barista Championship, held the first Master Class “The Art of Brewing Coffee” in January at Starbucks Reserve Pakubuwono. In a casual setting, Edward showed participants how to brew coffee by using the press and pour over method.

Edward took the time to thoroughly explain the importance of brewing coffee as it will have an effect on what eventually ends up in the cup. Indonesians generally make coffee using conventional brewing, a french press or a conventional coffee machine, but a deeper knowledge of the brewing process will help them unearth the original character of the coffee bean as well as train their sensitivity in tasting coffee.

“Coffee is all about the taste but sometimes people can’t identify the uniqueness of the coffee because the character doesn’t show up after they brew the grinded beans,” Edward said.

“Furthermore, we will know how to brew coffee beans that have many different characters by using certain methods in order to bring out the signature aroma, flavour, acidity and its body,” he added.

The press method will bind the scent (aroma), while the pour over will fully release the flavour. Uganda coffee, for instance, has a thick body (bitterness) and a fruity aroma. The coffee press could optimize the signature character of the coffee rather than the pour over that would emphasize its acidity. According to Edward, each specialty coffee requires different brewing methods.

“Of course people can make coffee with either brewing method, but if we want to show a coffee’s true character, it’s better to know how to brew the coffee in order to maximize the coffee notes. Many coffee lovers are concerned about that,” Edward added.

In addition, it’s also important to brew coffee by paying attention to a few other factors, such as the ration between the water and coffee, the freshness of the coffee bean itself, the level of grind coffee, as well as the water temperature.

Following the success of the first workshop, Starbucks Masterclass will return with different topics, including latte art, and coffee bean tasting. Coffee enthusiasts can join the workshops at Starbucks Reserve and Starbucks Reserve Plus around Jakarta, which will be held once per month.

“Starbucks often holds coffee talks where customers come together to discuss about coffee-related topics,” she said. “We realized that people are enthusiastic to learn more about coffee, and therefore, we decided to run the first masterclass in order for people to learn, practice and engaging in in-depth discussions with the barista and other coffee enthusiasts.”
