It is believed that authentic Japanese meals may have originated from Sennichimae, Osaka. In 1973 CHIBO was the first restaurant that officially served Okonomiyaki and Teppanyaki, and it has since become popular for its savory Japanese pancake. After establishing 60 outlets around Japan, CHIBO took its Okonomiyaki and Teppanyaki concept around the world including Hawaii, the Philippines, Vietnam, Hong Kong, Thailand, Taiwan and China. The restaurant opened its doors in Jakarta on 27 January bringing the teppan grilling experience to the city’s diners.

The restaurant offers a casual teppan grilling table with a series of signature items including Okonomiyaki, Teppanyaki and Yakisoba. Okonomi means ‘as you like it’ and yaki means ‘grilled’. Okonomiyaki is thus a very personal meal because you can make up your own toppings however you like it. Okonomiyaki is basically a pancake made of flour, egg, seafood, yam and cabbage topped with a variety of condiments like okonomiyaki sauce, Japanese mayonnaise and dried seaweed.

Specially in Jakarta, CHIBO offers Indonesian-style Okonomiyaki using a heavy base of chilli padi for those who love spicy food.

Okonomiyaki has two essential styles. The Osaka-style is made by mixing all the ingredients together, whilst Hiroshima-style is layered. Other items that are worth a try include Yakisoba (Japanese noodle stir-fry dish usually served with seafood, beef and chicken) and Gyoza (dumplings filled with ground meat and vegetables and wrapped in a thin dough).

Okonomiyaki is not complete without sauces, as its taste strongly relies on them. Either Okonomiyaki sauce or Japanese Mayonnaise is perfect. Okonomiyaki sauce is both sweet and sour. Generally, in Japan, the Okonomiyaki sauce uses more raisins for a milder flavour. You can also choose Japanese mayo as an option.
