La Chaine des Rotisseurs, An Exploration of TastesCulinary Talk
La Chaine des Rotisseurs is a worldwide organization dedicated to achieving the highest standards of food, wine and services quality and have delivered some outstanding culinary experiences in Jakarta in 2016. Over the last year, the prestigious events took place at OKU restaurant in Hotel Indonesia Kempinski, the Australian Ambassador’s Residence, The Four Seasons Hotel and the US Ambassador’s Residence, followed by a superb Gala Dinner in The Raffles Hotel and finally last month at the Italian Ambassador’s Residence.
The Chaine in Jakarta is organized by three separate “Bailliages”: “Provincial” under Alistair Speirs, Fabrice Mini, Gilles Marx, Bob Yanuar and Michelle Kanan, “Sud” under Linda Tan, Farah Quinn and Petty Elliott, and “Nord” under Roy Widosuwito, Noke Kiroyan and Sezai Zorlu. There is some serious expertise in these teams and it was the turn of Roy’s group to organise the last dinner at the elegant home of H.E. Vittorio Sandalli, the Ambassador of Italy to Indonesia. Roy turned to Chef Alessandro de Boni, who built his reputation in DiMare and La Luce, for culinary expertise and to Andrea Giannini for wine selection and service. His trust in them was more than justified as they delivered a magnificent “Exploration of Tastes”. Alessandro and Andrea styled the evening “An interesting voyage to discover the Italian food and wine culture” with dishes based on marvelous recipes from the five Italian maritime republics: Genoa, Venice, Pisa, Amalfi and Ancona, paired with some exceptional wines.
The blind tasting was a well-crafted surprise with wrapped bottles being served into black glasses so no-one could even see the colour of the wine. It was in fact a chilled Pinot Noir which matched the Jerusalem Artichole Soup quite brilliantly. The highlight of the meal was the Florentine Steak which was cooked to perfection and accompanied by an exceptional red “Luce della vite frescobaldi 2006”.
Entertainment was provided by the talented Grace Suherman on harp who played a great variety of tunes with style and imagination, and of course by the effervescent Bailli Roy whose wit and humour are always infectious.
