Low calorie konjac is a superb alternative to actual rice when eating healthy or trying to cut back on the calories a bit. Chef Marinka caters to health concerns by creating a lovely fried rice using konjac rice.
Konjac Fried Rice
Ingredients:
- Konjac/Keto Rice (cooked)
- Vegetables (any veggies)
- Eggs
- Chicken breast
- Fried Cashew
- Chives
- Spring Onion
- Salt
- Sugar
- Oil
Seasonings:
Red chili, big red chili, lemongrass (take the inside), galangal, ginger, onion, shallots and garlic, then blend all the spices with vegetable oil until it turns into a paste.
Cook Steps:
First, season the chicken breast with the blended spices and add a little bit of sugar.
Put some oil in a hot pan. Put the chicken breast after the oil gets pretty hot and make sure it doesn't get too dry. It's okay to put much oil in the pan, unless you want to make it really low on fat. Let it cook for a while.
Cook until the inside is really cooked, doesn't have to be really brown. Don't overcook it, unless you're using something with more fat content.
Once it's cooked, set it aside and keep the oil on the pan. Add the blended spices to the oil. Because there's no seasoning yet, you still have to add a little bit of sugar, as well as salt and pepper. Because you will put a lot of konjac rice, so it's fine if you add a little bit more salt.
Add the konjac rice to the pan, mix well with the spices, then add chives, a bit of spring onion, shallot, greens and egg. Scramble the egg.
Next, add the chicken and cashew. And then, the healthy fried rice is done. Plate the fried rice, add sunny side up egg and add the garnish.
