Culinary trend-setter and well-known modern Italian restaurant GIA from ISMAYA group recently added a collection of authentic dishes to its already delicious line-up, courtesy of Executive Chef Tommaso Gonfiantini.

The new seasonally inspired menu is another testament to the expertise of Chef Tommaso and his team of culinary experts. Fresh flavours and seasonal ingredients are the highlight as GIA once again moves forward to create new trends and deliciousness food enthusiasts are sure to enjoy.

I’ve had the pleasure of sampling several dishes among the 11 new main courses and one new dessert, and I can say that every one of them delivers its own satisfaction as my palate was reminded of GIA’s masterful interpretation of authentic Italian fare.

The Crispy Potato Pave was a savoury appetiser that stacks spicy beef tartare on square-cut crispy potato, topped with black caviar. Judge me if you will, but I like to enjoy this like I would enjoy a sushi—in one bite, upside down, with the caviar meeting my tongue first. This allows the fresh and cool caviar to be savoured first, followed by the juicy texture of spicy beef, and then finished with the crunchy bit of carb.

Bearing seasonal ingredients in force, the Tagliatelle al Tartufo’s focal point, in my opinion, materialises when parmigiano, truffle butter and dry porcini bits coalesced to form a nice mini broth for the homemade tagliatelle pasta to soak up. Therefore, the best way to enjoy this dish by stirring the contents of the plate beforehand, mixing in the freshly grated summer black truffle on top in the process.

The new dessert, Apple Tarte Tatin, is a sophisticated treat plating apple tart, cognac flambe and vanilla crema inglese. This is a show dessert in which part of the presentation is performed on-table as flaming cognac sauce is poured on top of your tart and vanilla cream. I doubt this immaculate offering will fail to impress you, but in case it does, you can always ask for the VSOP French brandy used in the flambe. I enjoyed the dessert but did this regardless. GIA staff were, as always, more than happy to please.

Other new courses available that you must not miss include the Bottarga Crown Ravioli, Sea Bass Cortoccio, Bone Marrow Spaetzle, Arancini Ragu, Marinara Bresaola, Piadina al Pomodoro, Ribeye Tagliata and Smoked Gnochetti Sardi In a Jar.
