Ambrosia Private Club welcomed new Chef du Patron, Mandif Warokka with an exclusive, two-night dining event for both members and non-members.
As part of its consistent effort to pamper members with deliciousness, Ambrosia Private Club flew in a renowned celebrity chef all the way from Bali for a special two-night only exclusive pop up dining event. Held on 30 and 31 August, the AMBROSIA X BLANCO par Mandif.
Exclusive Pop Up Dining event was met with a full-house on both night, both within the main dining area and the second floor VIP rooms.
Members of Ambrosia Private Club enjoyed the exquisite dining experience at IDR 1,300,000++ per person, while non-members were also given the opportunity to join at IDR 1,500,000++. Chef Mandif Warokka selected five of his signature dishes for the evening, which he recreated at Ambrosia Private Club for this special event.
Before taking to the dinner table, guests were treated to special cocktail creations from BLANCO par Mandif, crafted by bartender Raviella Angela. Among the two cocktails, Athena’s Garden and Passion and Potion, the latter was my favourite—a whisky based infusion that warms up the palate just right in preparation dinner.
The starter was Blue Swimmer Crab, a cold appetiser that highlights the rare blue swimmer crab’s fresh and tangy meat enveloped in “Aiko” mini tomato in gel form garnished with avocado, spirulina and edible flowers. A distinct sensation was introduced as the freshness of the crab meets with the gel’s subtly sweet scent. The sensation was pleasantly magnified thanks to the paired Gustave Lorentz 2017 Riesling.
The second appetiser was the Sea Urchin Raviolo, which comes with a pata negra emulsion that was both rich and soothing. The texture of the sea urchin was unbelievably easy to take in, without being too soft. The dry Tyrells Wine Chardonnay 2017 was the perfect pairing partner to compensate for the dish’s creamy broth.
The first main course was the Kiwami Striploin served with smoked aubergine, roasted eringy and, to top it all off, cognac reduction. The complexity of this plate may be intimidating, but the point of convergence was when I dipped a slice in cognac reduction ever so slightly and wash it down with the Chateu D’Angles Clasique Rounge 2015.
The second main dish, and certainly the star of the evening in my opinion, was the perfectly cut Lamb Eye Fillet “Jimba” Farm Grass Fed with sour dough crust, pistachio farce and thyme juice. This fine dish took full advantage of exceptional produce—juicy and full-flavoured, with excellent marbling. In the hands of an experienced culinarian such as Mandif, the possibility is endless, and I was at a loss for words when the first perfectly cooked slice reached my tongue. The Planeta Santa Cecilia 2015 enhanced the rich flavours as I sipped.
Dessert were the Ivory White Chocolate “Croissant” that combined guanaja emulsion, toasted almonds and elderberry creameaux in layered filo pastry; and a Guanaja Chocolate Tart.
To end the night, Ambrosia will finish in style. An after party promotion includes a 10% off on cocktails, shaken and stirred by award-winning Mixologist Raviela Angela and Batender Ghalim Patih, cocktails will be complemented by DJ to stars such as Nicki Minaj and Jason Derulo; DJ Gelly Kusuma.
