For the “Taste & Tea Symphony” brunch, Chef Travis Loh, celebrated for his deep-rooted mastery in Chinese cuisine, has created a dim sum menu that showcases the essence of Cantonese gastronomy, enhanced by the aromatic and flavour teas by TWG. 

These distinctive offerings include: 

Follow Me Tea, a blend of the finest green tea and rare ginseng root crowned with royal pineapple notes. This tea will be paired with bean curd shrimp with cheese rolls, deep-fried fish balls, steamed fish balls and chicken xiao long bao. 

Gunpowder Supreme Tea, a blend of signature green tea grown near the Huangshan Mountain, with a grassy infusion and lingering sweetness. This tea is paired with: charcoal shrimp dumpling (har gow), prawn crispy spider chang fen, sugar cane prawn, and shrimp dumpling mayonnaise. 

Imperial Oolong Tea, a semi-fermented blue tea with sweet, fruity undertones. Pairing this tea, will be the barbecue pork chang fen, chicken and prawn chang fen, and pork ribs with black bean. 

Shen Nong Tea, a black tea with a hint of licorice, paying tribute to the mythical Emperor Shen Nong. This tea will be paired with chicken feet with black bean, shrimp wonton with Szechuan oil in soy sauce and Chicken or pork char siew bao. 

To finish your brunch, there will be a refreshing iced Silver Moon Tea accompanying a selection of delightful desserts, including sago mango and avocado puree, egg tart, sesame ball with black sesame paste or egg custard.
