Food enthusiasts, especially Indian food lovers would want to mark their calendar on 10 - 14 September for a special Indian cuisine experience by Mumbai-based Chef Amninder Sandhu at La Moda, Plaza Indonesia, Jakarta initiated by Keraton at the Plaza.
Born to a North Indian Sikh family and raised amidst the region’s lush countryside, Chef Sandhu is currently in charge of Arth Restaurant‘s kitchen as the Executive Chef, and for this special occasion she is intent on sharing her love and passion for cooking.
Her dedication has earned her the Best Lady Chef Award in 2016 from the Ministry of Tourism, and in 2019 she was chosen to be the head chef of Arth, the first gas-free restaurant in India embracing ethnic Indian methods of slow cooking over wood fire and charcoal. The restaurant was named Restaurant of the Year at World on a Plate on the same year.
Acclaimed Netflix series The Final Table, highlighted Amninder as the only Indian chef who competed and represented the country on a global platform. This year, she was labelled The Girl with Gold in Her Fingers by the legend Marco Pierre White on his recent visit to India. She was also named Chef of the Year at the Times Food Awards 2019, and Outstanding Entrepreneur-Culinary at the prestigious Guide Awards 2019 by the media house Mid Day.
Her goal is to revive traditional methods of cooking and bring back local ingredients. Ensuring that every dish is prepared using the conventional approach, either wood or charcoal, Amninder has a soft spot for long-forgotten recipes passed down from generation to generation.
“Traditional methods of cooking, like chullah, heavy-bottomed, copper lagans, earthen chattis or tandoors, lend unique flavor to the dishes,” Amninder explained.
For her special visit to La Moda, the prodigious chef will prepare a special three-course set menu featuring exquisite dishes like the Kovalam Lobster Taco, Chicken Makhmali, Paneer Kofta—her The Final Table winning cuisine—which consists of Paneer, fried cashew, raisins served with butter naan, raan biryani, gosht ka halwa.
