“La Chaine” Makes a Triumphant Return

The world’s most prestigious gastronomic society returned to full form with a recent - and outstanding - dinner at ALTO in The Four Seasons Jakarta. Founded in France in 1248 but re-established in its current format in 1950, the Chaine (as it is affectionately known) is based on the old traditions of food and wine excellence and camaraderie at the table. 

 

The idea is simple: approach an already excellent restaurant and challenge it to make something outstanding. More difficult to achieve of course, but Chef Marco Violano of Alto took that challenge and prepared a delightful and insightful menu, which was universally enjoyed by the Chaine members and their guests.

Chaine members consist of culinary professionals: chefs, restaurant owners, hotel GM’s etc and the other members who just enjoy the very best of food and wines. A typical Chaine dinner will consist of six or seven courses, including a selection of canapes, and is always served exactly on time to allow the kitchen to prepare the food with no rush and no delays, ensuring the highest quality to the table.

 

Service is exceptionally important then and each venue has to ensure the highest standards of food delivery and take away. Alto’s team did this to perfection, in a venue which is itself elegant, comfortable and luxurious.

 

The wines are paired with each dish and usually supervised by one of the Chaine’s professionals experts, in this case Gilles Marx, who matched the food with some interesting and surprising choices to the great satisfaction of the dinners who are not there for the ordinary but the extra ordinary!
