Observing this fervor, in October 2024, the 5-star West Jakarta hotel has launched RASA by Collage, a casual fine dining restaurant that offers an authentic taste of heritage.
Reflecting the diversity of its traditional culture and geographical spread, Indonesia has a rich culinary legacy: a ton of fresh ingredients and spices. All over the globe, many gourmands have a high appreciation for Nusantara cuisine, as a melting pot of sweet, salty, sour, and spicy flavors.
RASA celebrates the varying colors of traditional Indonesian food, with it being named after the word “flavor” in Indonesian. On offer are a categorized tasting menu and an a la carte selection, ensuring that restaurant customers can evaluate the artistic exclusivities of Indonesia’s cuisine however they please.
In order to highlight a wide range of Indonesian dishes, the menus are assembled with dishes prepared using modern techniques while staying true to what Indonesia’s food traditions are at their core. A must-try meal is a selection of traditional Javanese cuisine, which they consider their trademark item.
Fresh, top-notch ingredients making up 7 separate delicacies are the backbones of an unparalleled food extravaganza. Key dishes of note range from the Tempe Bacem and Asinan Bogor as appetizers, the Sour Fish Soup, subsequently by main courses such as the Iga Bakar Menara, Padang-style Chicken Curry (Gulai Ayam Padang), and Honey Grilled Prawns with Sambal Matah.
Dessert featuring Fried Banana with Cheese puts a bow on the individual’s dining experience. Every meal on the menu gains more magnificence with the plates and bowls they are served on, crafted by hand via Naruna Ceramics artisans who put blood, sweat and tears into their creations.
