The refurbishments of InterContinental Jakarta Pondok Indah’s fine dining Japanese venue has gone beyond the dining space, introducing a new menu, atmosphere and an overall elevated experience.
In developing the new SHIO, what was envisioned was a destination that would embody the artful elegance of Japan, accurately channeling the country’s renown for detail, be it in the space or indeed food preparation.
This certainly has been achieved, as the re-opened restaurant reveals the sophisticated upgrade to the venue, offering teppanyaki / chef’s table seating as well as more private booth seating. It is an intimate space, defined by its modern-minimalist style embellished with Japanese accoutrements and finishings.
SHIO brings two Japanese dining traditions together, kaiseki and omakase. Kaiseki dining is a traditional multi-course meal that showcases the chef’s skills in balancing textures, colours, and flavours. Similarly, omakase is when the chef creates a personalised menu based on the freshest ingredients and their artistic vision. Translating to “I leave it up to you”, omakase allows diners to experience the chef’s creativity and mastery, much like witnessing an artist at work.
The menu’s highlight, featuring the highest quality A5 Kagoshima Wagyu Beef, promises a melt-in-your- mouth experience that pays homage to the rich heritage of Japanese culinary artistry.
