OKU Welcomes Chef Nic Vanderbeeken of Apéritif for a 3-Day Culinary Collaboration

One of the city’s most celebrated, premium Japanese restaurants, OKU at Hotel Indonesia Kempinski Jakarta, will be hosting a special guest from 18-20 November 2022. Chef Nic Vanderbeeken of the renowned fine dining destination in Ubud, Apéritif, will be bringing his exquisite signature dishes from Bali to the capital.

Those who have been Apéritif Restaurant and Bar in Ubud, Bali, know that a meal here is an experience. Polished, both in style and service, it has become one of the island’s most lauded fine dining venues, donning a 20’s inspired interior that speaks of the era’s decadence. At the helm of this restaurant is Belgian Chef Nic Vanderbeeken. Chef Nic spent five years leading the award-winning Cascades Restaurant in Ubud, and now puts his full mastery of the kitchen into Apéritif, where he presents a sophisticated degustation menu of European-styled dishes using by local ingredients and inspirations.

At Apéritif, Chef Nic is meticulous about his the quality of his ingredients. This is a value that is central to Japanese cuisine, and thus by the kitchen at OKU, where fresh seafood is imported from Toyosu Fish Market, Tokyo, twice a week to ensure that the restaurant only serves the freshest and highest quality sashimi, sushi and other seafood.

From 18 to 20 November, Chef Nic will work alongside Chef Kuni and the culinary team at OKU to present patrons with a special set menu, available for both lunch and dinner. The set menu will showcase the best of both Apéritif and OKU, combined for the first time to create a unique dining experience.

“I am very excited to be collaborating with OKU and I can't wait to welcome our guests,” shares Chef Nic, as he teases out some menu items for NOW! Jakarta. “We will present a Mackrel dish cooked using daun kemangi and daikon - white radish… and we will be preparing a very special Wagyu A5 as well.” A 4-course set menu will be prepared for the lunch sitting, whilst a sensational 6-course menu will be prepared for the evening dinner experience.
