1928 Restaurant at The Hermitage Jakarta, a Tribute Portfolio Hotel, continued its Chef Take Over Series this time with Chef Petty Elliot, who prepared a tasting menu dedicated to the heritage flavours of her hometown, Manado and experienced and richly enjoyed by us and many delighted guests recently.
With heritage being a central theme of 1928 Restaurant, highlighting The Hermitage’s colonial building, Chef Petty Elliott drew on her Manadonese heritage to deliver an exceptional dining experience. The celebrated connoisseur’s own special memories of helping her grandmother cook as a child brought heart and authenticity to each dish, presenting spices, herbs and ingredients that make Manadonese cuisine standout among other flavours of the archipelago.
The seven-course tasting menu started with an excellent crafted Long Island Tea Cocktail made at the table and continued with a tiny delicate Rujak to whet the palette. We then moved on to a succession a dishes each better than the last:
The Prawn Aqua Tomato, Kuah Asa was simply delicious;
The Smoked Octopus Tuturanga, was tender and smooth to the tongue;
The Coconut Tumeric Arancini was simply a masterstroke combination;
The Barramundi Tinorangsak, was delicate, fresh and fell off the fork;
The Wagyu Beef Cheek Semu was cooked to perfection and the
Klappertaart mille-feuille was a wonderful way to end
These were Chef Petty’s modern interpretations and innovations based on the core and original flavours of classic dishes, and honestly it has been some time since we enjoyed a meal so much from beginning to end. Watch out for more at The Hermitage who seem to be on a very good track in 1928. Well done.
