Wine Around this time aims to thrill the guest with one of Australia’s well-known family wineries De Bortoli while enjoying crafted cuisine prepared by the hotel's Executive Chef Christoph Pouls and his team.
Indulge the pairing of De Bortoli selection Sparkling Brut NV with the Boston lobster served with Mango & Sago Salsa and finished with Basil Espuma. A fresh seafood dish which will be perfect pairing with the finest DE bortoli selection. De Bortoli Sémillon Chardonnay is paired with fish dish, the Line-Caught Catch of the Day with curried cauliflower mousseline, green asparagus and carrot butter.
Chef Christoph will also be serving duck breast served with pan-fried foie gras, pickled red cabbage and rosemary jus paired with De Bortoli Merlot. The fifth pairing matches the spicy flavour of De Bortoli Shiraz with high quality protein dish Australian Short Rib Rendang served with perkedel gagal, cherry tomatoes and roasted eggplant. A perfect yet classic harmony between beef and wine which always complement each other.
