Inspired by the lush tropical rain forests of South East Asia , “Forest森” follows a unique design concept that aims to bring the outdoors indoors. The restaurant, which is one of the most visually stunning in Singapore, features a centerpiece reminiscent of interlocking branches and leaves and supported by four magnificent tree columns, evoking a natural relaxing and calming atmosphere.

With famous local Celebrity Chef Sam Leong and Chef Mike Tan at the helm, the restaurant breaks traditions and takes bold steps to reinvent contemporary Chinese flavours with novel ingredients, while the two chefs follow a Western approach in terms of service and presentation of the dishes. Guests are strongly encouraged to experience the chefs’ signature dishes, such a Milky Chicken Broth, double-boiled with morel mushrooms and wild bamboo piths served in young coconut, Kagoshima Wagyu Striploin, charcoal-grilled sauteed assorted mushrooms and seared foie gras in black pepper sauce, Mapo Tofu with Fragrant Japanese Pearl Rice, wok-fried tofu with traditional Szechuan chili sauce, and Sri Lanka crab meat topped with Sri Lanka crab claw as well as spring onion and seaweed powder, and foie gras, pan-seared with Yuzu sauce and served with smoked duck breast and crispy beancurd bean.

Thanks to a distinctive open Chinese-style kitchen, guests can enjoy an unobstructed view of the chefs while they create their masterpieces, without the walls that typically separate the noisy kitchen from the main dining area. With a capacity of 166 diners, restaurant visitors can choose if they would like to sit indoors , enjoy the luxury of a private room, experience the Chef’s Table, or head outside for dining al-fresco. The One-Michelin Star restaurant also makes a perfect venue for private parties

Every Sunday between 12 and 3 PM, diners can celebrate the end of the weekend with an incredible eight-course lunch menu compromising 13 dishes that will be served in tasting portions. Take the time to savour these culinary inventions by Chef Leong culinary as they come in a tantalizing range of flavours. Located at Lobby Level of Equarius Hotel, Resorts World Sentosa, “Forest森” is open daily for breakfast (for in-residence guest only), lunch and dinner.
