Bali is known for being a rich and fertile island, but not many are aware that each of the eight separate regencies of Bali highlights specific produce. These ingredients are the focus of an on-going dinner series at The Warung, an authentic Indonesian restaurant at Alila Villas Uluwatu.
The ‘8 Regencies Journey’ dinner series invites four experienced guest chefs from around the island, particularly skilled in Indonesian cuisine, to each craft a dining experience inspired by two different regencies of Bali. In June, Chef Kieran Morland of Merah Putih explored Buleleng and Karangasem; in August, Chef Nic Philip of Hotel Indigo Bali Seminyak Beach experimented with Badung and Bangli; this September, Chef Wayan Kresnayasa of Potato Head Beach Club and authentic Indonesian restaurant Kaum brings us the flavours of Negara and Klungkung; and finally in October, Chef Putu Dodik of Nusantara by Locavore will finish the journey at Tabanan and Gianyar.
This 25 September, join Chef Wayan Kresnayasa as he explores the flavours of Klungkung and Negara, bringing the central ingredients of kaffir lime, coriander and turmeric into the kitchen. Keeping things fresh and presenting fantastic new offerings, Jamie’s Italian Kuta Beach strives to maintain the excitement and curiosity of diners by exploring more flavours while preserving their rustic and classic Italian roots. With these eclectic new additions on the menu, diners will surely find a dish that suits their taste buds.
Find delightful and savoury appetisers, such as Olives on Ice, Sausage Ravioli or Lamb Pappardelle and Gnocchi Genovese, for the pasta options. Save some room for the 11oz Rib-Eye steak served with char-grilled Portobello mushrooms, green salad and a choice of creamy porcini, herby garlic butter or balsamic onion sauce; the Steak Tagliata, Gennaro’s Porchetta and Pan-Roasted Salmon Fillet are also a must-try for your main course.

‘Meat the Chef’ at Henry’s Grill & Bar
Dry-aged beef and a chef’s secret recipe—these are what make Henry’s an iconic grill and bar here in Bali.
To mark Chef Danny Chaney’s nineteen years of culinary journey, ‘Meat the Chef - A Culinary Journey’ will introduce six remarkable dishes from September 1 to 10, inspired by the chef’s approach to steak cooking methods using high-quality imported meat. Chef Danny will be sharing his famed dry-aged method, as well as fusing the classics and trends from the very first menu he ever cooked.
The new menu includes Australian Grilled Beef Tenderloin, Danny’s version of Steak Tartare on Toast, Baked Beets, Crispy Pork Belly Sliders, Grilled Pork Chop with curried eggplant and tzatziki and Seared Barramundi with charred corn salsa and garlic aioli.
Henry’s open kitchen concept gives you a live-action culinary experience from the edge of your seats—you’ll be watching Chef Danny and his team prep their work of art from start to finish. The dishes at Henry’s are entirely powered by wood fire with the 28 - 30 days dry-aged method, which adds more flavour, tenderness, and controls the level of moisture of the meat.
The culinary experience at Henry’s is enhanced by a Steak Academy launched on 4 October to be organised regularly every first Friday of the month. You’ll learn in detail about beef, steak and wine pairing, steak and beer pairing and many more. Participants will be given a certificate each time, whilst an exciting reward await those who have collected five certificates.
